Pumpkin with couscous

Right.

You need a bit of pumpkin, feta cheese, sun dried tomatoes, basil, pine nuts, couscous, leak, onion, rocket, some parmesan cheese, a bit of olive oil and sunflower or any cooking oil.

First you cut and peel the pumpkin and remove seeds and pulp. Cut it into longer thick slices. Then put in in the oven for about 30 mins at 180 degrees with a bit of water so it doesn't go dry. The sugar in the pumpkin will caramelise and go all yummy. If the water evaporates just add more so it doesn't burn.

Mix feta cheese, chopped sun dried tomatoes, chopped basil leaves and pine nuts into a paste. If it's too thick to blend it add a bit of olive oil.

When the pumpkins are done (when you can pierce them with a fork easily) spread the paste on top of them.
Put them back in the oven for about 10 minutes.

While waiting, you cook a quick-cook couscous. Fry sliced onion and leak with some cooking oil. Mix it with couscous and add some olive oil.

Take the pumpkins out of the oven and serve them on plates with couscous and rocket with parmesan.
