Funny fruit veg thing

I got this funny spikey veg (insert name) from my mum and got told that you cook it like you would cook a courgette. So I did! I added a bit of broccoli, peas, vegan cream, parmesan, spices and herbs and threw it up in the air so it landed on a plate of wholegrain pasta! It looked a bit like this:

*Use gloves and knives and forkes when picking it up and cuttnig the evil spikes off! It DOES hurt!

Vegan Brownies

What you need for about 6 of these yummy vegan brownies:

1 cup of all-purpose flour
4 tablespoons of vanilla flavoured icing sugar
2-3 tablespoons of unsweetened cocoa powder
1 teaspoon of baking powder
a tiny bit of salt
a bit less than a full glass of water
a bit less than a full glass of vegetable oil
chopped almonds
chunks of cooking chocolate

Stir the flour, sugar, cocoa powder, baking powder and salt, then add water and oil and mix until its well blended. Add almonds and chocolate chunks. Put in a small baking dish tray thing and bake in the oven for 20-25 minutes on 175°C. Leave it for 10 minutes to set before cutting, then stuff your mouth with it until you're feeling a bit sick.

Food ...again

Veggie rolls with ceasar salad! Yum yum! Rice with herbs and linseed, flaky pastry with stir fried mixed vegetables and nuts...you don't need the recipe, if you want to make it, improvise!

Pizza

Ciao bella!

My first (completely and absolutely) home-made vegetarian whole-wheat pizza! (If you're guessing what's on it, aubergines, courgettes, sundried tomatos, artichoke, white asparagus, belgian endive, tomato sauce, oregano, pizza cheese, sour cream and i added a bit of avocado on top after taking a photo...and don't forget chilli oil!) The shape is obviously made to be photo-friendly.

Spinach in pastry with friends (V)

You need: flaky pastry, spinach leaves, feta cheese, Parmesan, pine nuts, chives, black pepper, different vegetables that you like, shallots, sunflower oil, olive oil, quick-cook couscous, linseeds, salt, 35 minutes of your time, empty stomach, power music and/or The Mighty Boosh series in the background (optional).

Put flaky pastry in a baking bowl and spread a bit of butter on top. Put it in the oven (220°C) for 5 minutes. While waiting, steam spinach leaves in their own juice, strain it, then put it on the pastry with feta cheese and maybe a bit of sour cream and pine nuts. Add black pepper and herbs (chives) if you wish. Put it back in the oven for approx. 10 minutes.

Tell your boyfriend not to come in the kitchen 'cause it's a surprise twice. (optional)

Chop different kinds of vegetables (courgettes, peppers, broccoli, green beans, shallots, aubergines...) and cook them for about 10 minutes, then put them in a frying pan with sunflower oil, salt, pepper, herbs and spices and leave it to fry until it starts to go slightly brown.

Make quick-cook couscous and add olive oil, linseeds, grated Parmesan and chopped shallots and salt. I also used a spoon of Bisto to give it a bit more taste.

Put it all on a plate, use a fork and a knife to eat, try not to make a mess.

Dober tek!

Pumpkin with couscous

Right.

You need a bit of pumpkin, feta cheese, sun dried tomatoes, basil, pine nuts, couscous, leak, onion, rocket, some parmesan cheese, a bit of olive oil and sunflower or any cooking oil.

First you cut and peel the pumpkin and remove seeds and pulp. Cut it into longer thick slices. Then put in in the oven for about 30 mins at 180 degrees with a bit of water so it doesn't go dry. The sugar in the pumpkin will caramelise and go all yummy. If the water evaporates just add more so it doesn't burn.

Mix feta cheese, chopped sun dried tomatoes, chopped basil leaves and pine nuts into a paste. If it's too thick to blend it add a bit of olive oil.

When the pumpkins are done (when you can pierce them with a fork easily) spread the paste on top of them.
Put them back in the oven for about 10 minutes.

While waiting, you cook a quick-cook couscous. Fry sliced onion and leak with some cooking oil. Mix it with couscous and add some olive oil.

Take the pumpkins out of the oven and serve them on plates with couscous and rocket with parmesan.

Bon Appétit!
